Doubling the number of picks is a good idea, but not early on. I would recommend that from Rounds 1-8 it's single selections, then for the remainder you get double picks.
Drafting 240 players into 16 squads does take time. Be prepared.

Usually the first few rounds go pretty quickly as everyone is aware of who has gone and who is left. The later rounds are more difficult with people often suggesting players who have already been taken.
In previous years I've kept my own record of who has been drafted as each pick is made which has made my job(of selecting the best of the rest) much easier.
Those DuFFLers who will be completing their first draft may want to think about listing picks themselves as they happen to speed things along.
